Sausage and Peppers Skillet Dinner


1 large green bell pepper
1 tablespoon olive oil
1 garlic clove, minced
1 medium onion, thinly sliced
1 cup sliced shiitake mushrooms
8 ounces hot Italian raw turkey bulk sausage (or two 3.9- ounce uncooked links)
1/4 teaspoon crushed dried oregano
1/4 teaspoon salt
1/8 teaspoon pepper
1/4 teaspoon crushed red pepper flakes
4 medium tomatoes, cored, seeded and chopped
1/2 cup tomato sauce
2 cups cooked whole-wheat pasta


Core and seed pepper. Chop. Heat oil in large nonstick skillet. Add pepper, garlic and onion and cook over medium heat for 2 minutes, stirring occasionally. Add the mushrooms and cook for 5 more minutes or until tender. Add turkey to the skillet (remove casings first for links) and break up into chunks using a wooden spoon. Cook over medium heat until browned, about 5 minutes, stirring frequently. Add oregano, salt, pepper, pepper flakes, tomatoes and tomato sauce. Cook over medium heat for 10 minutes or until the tomatoes are tender and pulpy and the
sauce is slightly thickened. Serve over pasta. Makes 4 servings.
