About 1 pound shrimp, peeled and deveined
1 teaspoon lemon zest
1/2 teaspoon lemon juice
2 tablespoons green onion, chopped
2 tablespoons mayo
1/8 teaspoon salt
Pinch of black pepper
8 petite rolls, split in half
1 cup mixed salad greens (spinach, arugula, etc.)
In a medium sauté pan over medium-high heat, coat bottom of pan with cooking spray and add shrimp. Sauté for
about 7 minutes or until cooked through. Using a slotted spoon, remove shrimp into a bowl to cool for 5 minutes.
After shrimp has cooled, spoon shrimp onto a cutting board and chop into small pieces. Return shrimp to bowl. Add next 6 ingredients and stir until combined. To assemble rolls, place some greens on bottom of each roll. Top with
1/4 cup shrimp mixture. Makes 8 servings.
